Pastry Cream

Ingredients:
3 yoks,
3 tbsp sugar,
3 tbsp flour
300ml milk
lemon peel or vanilla
Directions
- Bring milk to boil over medium heat in a heavy saucepan. Add lemon peel or a splash of vanilla
- Whisk together egg yolks, sugar, and flour in a separate bowl; stir into eggs until smooth.
- Pour boiled milk into the egg mixture in a thin stream while mixing so eggs do not cook. Return egg mixture to the saucepan; slowly bring to a boil, stirring constantly to prevent curdling and scorching.
- When the mixture thickens, remove it from the heat. Pour into a heat-proof container; place a piece of plastic wrap directly on the surface to prevent skin from forming. Refrigerate until chilled before using.
