Pasta Carbonara al forno (Pasta Carbonara in the oven)

Baked carbonara is a very tasty recipe made in the oven. it is a way of not consuming raw eggs while savoring the taste of carbonara.

Here is the recipe:

 

Ingredients

  • 320g Pasta (rigatoni)
  • 200g Guanciale with pepper
  • 20g Pecorino cheese
  • 130g Parmesan
  • 3 Eggs
  • 200g Mozzarella cheese
  • 2 tbsp Extra virgin olive oil
  • Salt just enough
  • Pepper just enough

 

Method

  • In a large pot, boil the pasta al dente. Cut the guanciale into cubes, put it in a pan, and brown at medium-high temperature.
  • Remove the bacon from the pan and leave the fat. Add the butter and flour and start making the béchamel. After a few minutes add the milk, nutmeg, salt, pepper, and Parmesan.
  • Meanwhile, in a bowl mix the cheese with the eggs, add the pecorino and pepper and mix everything to obtain a cream.
  • Combine in a size from the guanciale to the béchamel, to the cream and use it to season.
  • Arrange the drained pasta al dente, the béchamel, the bacon, and the cream in a baking dish.
    Sprinkle with the Parmesan and put it in the oven to brown at 180°C until the surface begins to turn golden.
  • Serve hot.
